Recipe: Strawberry Cheesecake

I am truly sorry… i don’t mean to hit on the hunger nerve during fasting hours in Ramadan… it’s just i have been bit by the desserts bug lately!
I am a person who truly dislikes cheescake. It is just not my cup of tea -or slice of cake for that matter-
But my earliest cooking memory is of me standing in the kitchen of our old house, mom mixing some mary biscuits into a fine powder and asking me to peel the kiri cheese and put it in the blender… to be frank, i am certain that making the traditional q8y style cold cheese cake was my first cooking experience ever…
and then i was blessed with a husband who simply adores cheescakes… but cannot have any since he is allergic to eggs… same thing with my brother… the cold ceese cake is a good fast compromise for their cravings. It is also quite simple and requires nothing but some ingredients found daily in ur fridge and half an hour of your time (plus an hour to chill before serving)
Ok here goes…
The Ingredients
Then the method…
- Put the Biscuits of your Choice in a Clear Plastic Bag…
- Bash with a rolling pin until it is a fine powder, you can use a machine but i don’t want to to save on the washing… besides it’s a good exercise for your nerves !
- Now it’s ready!
- Add the powdered biscuits to a pan on very low heat -or it will burn- and add the butter… stir carefully until it resembles wet sand consistency…
- It takes a while to melt! Note: it’s better if you use already melted better so you would finish immediately! Stupid Me!
- Add a dash of Chocolate Powder to the mix to make it darker and to give it a nice flavor… mix well!

Spoon the mixture into a Cheescake Baking Dish. the one that opens from the side...

Spread the mixture out evenly, smooth and press down in it hard with the back of a spoon...

Cover the base mix with Cling Film, put it in the fridge for about 30 minutes to cool and set while you prepare your filling...

In a bowl, start preparing the filling by emptying one packet of Light Philadelphia Cheese, it adds the smoothness but doesn't taste that good...

Now add the Kiri Cheese, it has the creamiest flavor, tastes really good, but the texture is a bit tough... together with the pheladelphia they are the perfect cream cheese marriage

Whisk the cream cheeses together for a bit

Vanilla time!!! You can just use a tea spoon of vanilla essence, but i want real vanilla pods with vanilla seeds in my mix! It elevates the quality of the Cake and makes it look store bought! You can find vanilla pods in TSC

Place the heavenly smelling vanilla pod on a cutting board... you know it's worth it when u smell a pod...

Slit open the Vanilla Pod in the middle with a sharp knife... ahhh the smell the smell!

Scrape the vanilla seeds with the edge of the knife, scrape it well... you don't want to waste any tiny seed...

Add every last bit of vanilla to the mixture

Whisk the mixture.. see how the vanilla seeds spread?! Tres Chic!

Never throw the remaning vanilla pod out! Stick it in your sugar container so your sugar would become vanilla scented sugar!!! The smell won't leave you! I wish i can stick it in my hair!

Now add the grated rind of one lemon to the mix... it brings out the sourness of the cream againts the warmth of the vanilla and the sweetness of the sugar to be added...

Now add the juice of one lemon... i used a mesh colander to juice my lemon directly above my mixture so it would collect all the seeds and debris...

Whisk and then add a little bit of sugar... about 150 g only...

Whisk whisk whisk... you can use an electric mixer but i could always use the exercise to my arms...

You know your mixture is done when soft peaks appear ... stop whisking now!

Will you just look at that texture?!!!

Take your now set base out of the fridge, and start putting the filling on top...

Spread the filling evenly with a spatula

Try to make the top of the cake as smooth as possible

Cover with cling film and keep in the fridge to chill until serving time

Time to prepare the topping, i used fresh strawberries that i have frozen... frozen ones would give better results as the sauce will be thicker than the one made with fresh strawberries

Add some sugar on top...

Start mixing the strawberries

The mixture is done!

Pour the now ready sauce into a jug

Cover the jug with Cling Film

Keep the sauce in the fridge until serving time...
