My Home Made Hummingbird Bakery Cupcakes

Since the cupcake mania is not going anywhere soon and the cupcake business is booming, i was wondering how hard it can be to bake a good cupcake my self… i got my hands on the Hummingbird Bakery cook book… i decided to make my first cupcakes using their recipes… did you know the Hummingbird Bakery is actually owned by a Lebanese guy Tareq Malouf? I wish i could move to london and bake qers 3qaili and make a name out of it like he did but well… moving on…

I used the Vanilla Frosting (with drops of color) on top of my chocolate cupcakes and chocolate frosting on top of my vanilla cupcakes… see how pretty they look -in the book of course-

If you have some butter, milk, flour, vanilla, sugar, and one single egg… you can make a huge batch of mini and large cupcakes and decorate them… they won’t cost you more than 5 KD (and the ingredients can be reused) and they take 40 minutes to finish -including washing up time- and 20 minutes to decorate… yes only one hour!!! Plus you know how clean they are and how fresh your ingredients were!

In my case i used the Ma6a7en white flour, Lurpak  butter, Mara3i Vital low fat milk, and Organic Eggs and they turned out amazing -taste wise- and halaga -decoration wise-… Insha2 allah next time i might use Yeo Valley milk and butter -british- with some french organic eggs and note the outcome and im planning to use a piping bag to decorate – i was too impatient to try them this time-

      Oh hon thank you :* they don’t look messed up?

      I used paper cups inside a cupcake tin i have bought from Ikea, for both the small and large ones… the book was saying something about the difference between muffin cups o cupcake cups (i think muffin cups are bigger) but i used normal cupcake cups keifhom…

      Hmmm some min dubai, some min il khafji (yes seriously), o some min UK but not a lot
      Dean and Deluca offer some colored sugar sprinkles but thats about it
      i am going to check Tavola in Shuwaikh as well to see if they stock anything

    I was so excited when I got this book and immediately started baking. So far nothing worked, I tried the cup cakes are too light you feel like you’re eating air. The quantities are inaccurate, the cooking times are completely random and the results are just not good. I consider myself quite a good baker and have never had so many problems before, even with the most complex recipes I followed them to the letter and still nothing works! Fabulous pictures but disappointing recipes.

    No disrespect to Mr. Malouf, but I was left thinking yet again, about why he decided to publish a book about recipes from the bakery, if he was not going to be honest about measurements?

      Hmmm you see i used actualy cupcake cases and they call for something with muffin cases… i had my over preheated at 170C and not one degree more, and used very little cupcake mix in each cup… they recipe said to bake them for 20-25 minutes but i noticed that the mini cupcakes were done in 10 minutes and the big ones were done in 15!

      Plus im using a tiny organic egg? It is definitely smaller than the eggs used in UK or USA… but the cupcakes turned out fine… they very much resemble their signature cupcakes albiet i teeensy bit dry but i think that was because i over cooked them by mistake?

      I have only tried the vanilla cupcake recipe though with the basic vanilla frosting… and i tweaked the chocolate ones in terms of adding a little bit more flour/cocoa than stated… i did not try any other recipes but i had my eyes on the raspberry brownie cheesecake? Have you tried that one?
